  • (Disgorged in April 2015, base year 2009 with 30% reserves, 100% Chardonnay from Chouilly, dosage 2 gr/L)
    Yellow colour with a nose showing incipient maturity with notes of ripe green apples, cream and minerals in a very pleasant and refreshing way. Delicious palate showing fruity green apples acidity combined with butter pear and a crispy mid before an oxidative note of ripe green apples together takes over on the creamy finish. Matched the Caesar salad perfectly!
    (Probably best with 1-5 years extra cellaring)

  • (Disgorged in April 2013, base year 2007, 100% Chardonnay from Chouilly, dosage 2 gr/l)
    Light yellow colour with a maturing nose showing hazelnuts, citrus and chalkiness. Gentle citrus acidity on the palate with a nice butterscotch note on the mid with a nice minerality before the smooth and pleasant lemon zest finish. This was perfect in the windy but nice afternoon sun before going to a friend for dinner. This has really opened up with the extra cellaring and reminds me of their Millésime 2007 on magnum I opened last year!
    (Best with 3-6 years extra cellaring)

  • Tasting together with Jérôme Legras.

    Even more concentration compared to standard BdB.
    Mineral. No oak. Sharp in a nice way.
    Different mindset of making this one.
    100% Chardonnay. 100% Chouilly. Only top of the hill vineyards, they are more salty. Elevage 5-6 years making softer acidity. Less reserve wines to not make it over creamy.
    Dosage 2g/l. MLF, no oak.

    This Cuvée is a huge step forward and probably my favourite, considering QP ratio.
