more rounded and deeper than the carbonique - obviously - as it was fermented traditionally as opposed to carbonic maceration. This will need some time, but I think this will have subtle cool blue fruit with some earthy elements when given some bottle age.

Taste at FHE with Matt of Rootstock. Refreshing. Finesse and a little funk with light pepper spice. Nice texture, bright fruit on the palate as well as more spice and earth. Great acid. Lovely wine.

slightly dirty and tart cherries, great acid and a little spice. Went perfect w crispy skin Chinese five spice pork belly
