Community Tasting Notes (1)

  • I've had a run of mediocre white Burgundy recently, so much watered down, oaky, oxidized and expensive, mediocre stuff. So this was a breath of fresh air; finally, a white Burgundy that tastes like what it is supposed to!

    This is nice example of a mineral, chalky, textured, Chablis. The aromas and flavors lean towards lemon, lime, lemongrass, chamomile flowers, and a good bit of minerality. I love that Chablisienne chalk feeling in the mouth that is so unique to the region and compliments food so well. Day one was better than day two. Funny that on day 1 I thought it was perfectly balanced, but day two seemed to bring out a clumsy oak note that wasn't completely integrated; this is a reversal of the usual time curve for me. Usually I've found that flavors integrate better after the wine gets some air. Not sure what that's about, but an interesting observation. I don't think there is a particular rush on this wine. Drink now, drink later, both good. 8 years old and going strong! Lovely.
