Relatively closed on day one, actually able to keep in the cellar and taste at 24 and 48 hours, definitely best following 24 hours slow ox, but held together after 48. Dark cherry, limestone mineralite, not especially complex but a very elegant rendition.

Complex nuanced nose, smoke, minerals, cherry, lipstick, sopressa-like charcuterie, floral perfumes, even a hint of menthol. Palate essentially dominated by tannin and acidity at present, but I think holds promise of good things to come.
