  • Not to sound too biased but Brian Carter doesn't make a wine I don't love but I will try and approach this note objectively. That being said, Corrida is a beautiful spanish blend, dark purple core that is thick and creamy. I uncorked this bottle in the AM before work knowing it was the pairing for the evening, tasted it and immediatly got beautiful bouquet of flowers with lavender and roses, ripe red fruit, and casis. After 9 or so hours uncorked (decided it didn't need decanting), the nose developed licorice and black pepper.

    The palate is filled with vanilla, spice, fresh cracked black pepper and bbq meat, almost a briskety flavor. The back of the palate is filled with cedar wood smoke, anise, and licorice. Medium acidity, dry, and tanins that are smooth and silky. This is a very loud wine, it lasts on the palate for days. My only complaint is that for some the Oak may show through a bit too much, but I don't mind it at all as it doesn't mask the grapes. We paired this with a tri tip steak marinated in red wine and cracked black pepper that was pan seared in butter and finished in the oven. This was next to Provence fried potatoes with garlic, sweet corn and a pan gravy. Wine Served at 60f
