2011Not quite as black as the name suggests, Jean Luc Baldes experiments with several barrels in his cellar. Using 13th Century texts for guidance, he heats the must up to sixty degrees which creates a heavily extracted, highly tannic wine that needs a lot of patience to experience at full potential. Having been warned by my colleagues, I decanted for eight hours and served with beef bourgignon, the nose has a strong prune and candied plum aroma, but slightly volatile. The palate, although laced in tannin, has bright, sweet red apple acidity and a long finish. A unique experience. ****
