  • At its absolute peak... it still had some solid bubbles, toasty, biscuity, slight oxidized flavors and a beautiful golden color only aged Champagnes achieve.
    Made by the late great sparkling wine pioneer of Napa and kid growing up in Champagne France, Guy Devaux, he would be very proud of how his love and passion ended up... perfection in a flute.

  • Opened for Christmas Eve dinner, served chilled. Nice medium golden color. Nose has toasted, buttery brioche, a hint of baked apple, and some subtle mineral notes in the background. The palate starts fairly consistent with the nose, there is also a hint of toasted marshmallow with the brioche. The baked apple becomes a tart granny smith towards the back end, along with moderate acidity in the fairly long finish.

    Paired very well with prime rib. Outstanding!
