Sourdough, bruised apple, almond, orange zest. Right to the point, this tastes like sparkling amontillado sherry. And I love sherry, so this is my jam. Like a fresh baked apple strudel with loads of added nuttiness. Fair mousse, short lived. Really great balance, medium length. Pronounced intensity. Not crazy complex, but very cool. Rei says it tastes like sourdough brioche and peanut butter.

Bottled on 08-03-2017 (March 8), disgorged Aug 2019.
Beautiful nose of cream pastries, toasted brioche and fresh star fruit and membrillo. Fantastic palate just loaded with orchard fruit, membrillo, lemon/lime and a long, long saline finish. This is fantastic and even better than the last disgorgement I had. Every bit as great as Champagne, this doesn't have the green snap pea character of my last few bottles (different disgorgement and vintage base). I doubt this will age like high quality Champagne, but why wait when it's THIS delicious now. Finished a bottle of Laurent Perrier Brut last night and this is markedly superior! 93
