  Grapefruit pith and raw almond stand out on the nose of this beautifully golden straw colored sparkling wine. Lingering bubble and a second approach on the palate lend pleasing notes of effervescent sea spray, key lime, creamy mousse and vibrant chalk-like mineralogy. This thoughtful blend of nearly 50/50 Chardonnay and Pinot Blanc pairs well with oysters topped with a kiwi mignonette or seared scallops.
