  I had to look up this appellation when I got home... this is sauvignon from a region very close to Chablis. Maybe it’s the association but this wine has a great flinty character that balances the guava and green apple fruit. Dry as a bone on the palate and finish. A touch of bitterness also keeps the fruit in check.

  Flying l'Yonne; 8/29/2017-9/1/2017 (Irancy - France): Expecting cat pee because it's youth then biscuity with citrus jasmine and limestone. Also mineral of iron and cinnamon. Awesome complexity.
  Initially showing an austere character on the palate, considerably dry but developing a savoury acidity and bitterness. A good framework.
  That's how 2015 shows its beauty.
  
  Esperando pis de gato por su juventud así que galleta con jazmín de cítricos y piedra caliza. También mineral de hierro y canela. Increíble complejidad.
  Inicialmente muestra un carácter austero en el paladar, considerablemente seco pero desarrolla una buena acidez y amargor. Un excelente marco para este lienzo.
  Así es como 2015 muestra su belleza.
