  • I needed to try another bottle tonight, only 2-1/2 months after the last. Previous notes apply, though without the WOW factor hitting me this time around, coming off as more acidic for whatever reason (probably palate conditioning). We enjoy these!

  • Poured a glass at cellar temp before putting in an ice bucket. Extremely noisy effervescence upon opening, 1+" mousse in bottle while chilling, fairly large bubbles in glass. As much as I have not cared for bottles of the 2014 Starr Vyd Amber Block Rose, I ADORE the BdB (Dijon Chard Clones 95 & 96) Cooper Block! So crisp and perfectly balanced. Lemon and green apple head straight for the nostrils, uplifting light citrus (lemon-lime?) and saline fill the palate with a long-lasting mineral and lime finish. If tasted blind, I'd guess NV Ruinart BdB. A truly great example of this terroir-driven style. No advantage to holding, 2 left to wow me over the next whenever I just need to have another one.
