Opened up 17 of December. Poured half of the wine into a 375 bottle, vacu pumped put in the fridge… and forgot about it. Opened it up today…. Stunning nose… a friend opened up a $200 puligny-Montrachet the other day and this Chablis is pretty close to it. No, I’m not crazy. A very tropical exotic fruit and flowers plush nose. Drinking fairly rich with a leaner focused Chablis style. An exciting young balanced wine.

Not classic , not timid but a pretty big and exotic fruit, concentrated Chablis. The nose after 3 hours is still intoxicating of white flowers, ripe pineapple, honeydew ,white peaches, lychee fruit all that sweetness on the nose is countered by the mouthwatering acidity while drinking it. Drinking, grapefruit and lime acidity, orange peel oil, a bit of salinity, a smooth saline mid palate with a major burst as the wine passes through the mouth to the long racy finish. The nose and drinking is so far apart that if blinded I would never pair the nose with drinking it. The nose is great on its in as is drinking it…. Harmony… balance…maybe not but delicious. I don’t know what food I’d pair this with but good on its own.

Light slightly developed golden color. Nose is pleasant with honeysuckle, apricot, salinity and minerals. Palate has medium- acidity and is somewhat developed and on the ripe side. Yellow stone fruit, honey, and pretty heavy oak. Finishes medium length and somewhat complex with salty toast and some reductive matchstick. Very nice bottle likely drinking close to it's peak but hasn't reached it yet.
