Decanted for 1h (as reccomended by the importer here). Wine is clean and stable, no volatility I can detect. Reductive nose with notes of butter and popcorn. I imagine this to be an amalgam of De Moor and Bernaudeau, clearly a white wine vinified in the low intervention (no sulphite added) tradition. If drank blind, this would more Chenin than Chardonnay to my palate. High acidity kept in check by a slight bitterness in the finish - complex wine that changes with each sip. Certainly not a wine for everyone but very enjoyable for me.

First time tried his white wine. I literally said “Wow” when I smelled the wine. The aroma is so special and complex, sea shell, salted pineapple/pear, jasmine tea, modestly ripe on the nose. Interestingly, we had this wine along with shrimp toast, a traditional Cantonese food; I initially thought the aroma is from the food. I moved away from the table and double checked that scent - it is that special and aromatic! On palate surprisingly it was quite light, actually showed a bit more honey-like sweetness, white flowers and modest minerality. After opening for 1-2 hours, nose somehow became more reductive. It seemed that it kept evolving the whole night as it is quite a young wine.

I like the nose very much with white chocolate, peach, and exotic fruit. Palate is fat and ripe. It has a rather low acidity which is common for 2015. Interesting wine but quite expensive for what it is.

Coravin in a restaurant, this is an excellent wine already drinking well. It is not necessarily immediately recognisable as burgundy.
