This is the best Chardonnay I’ve ever tasted. Poured at a tasting at the Ceritas facility. Fantastic minerality, acidity, lemon and tropical fruit. There is also a saline note that makes this wine pretty unforgettable.

A restrained and graceful bottle of wine exhibiting melon, sea salt, lemon, minerals, and moderate acidity. Wonderfully balanced with a lingering finish. I will hold my last bottle for two more years, and I look forward to its evolution.

a Small Ceritas Heintz Chardonnay Vertical (chicago, IL): This took a little bit to open up at first. Once it unfurled, it showed off excellent depth and balance as it fills the glass with tones of custard, apples, vanilla beans, ginger, cinnamon, pears, limes, nougat, and saline, meyer lemons. The Medium bodied feel is well balanced and textured while showing off excellent depth along with tart, medium+ acidity. This was the youngest of the trio, but it also felt like it's pretty much in its window. There was the right mix of maturing tones and primary, fresh fruits that really scratched the itch after it opened up.

Opened up over 4 hours. Drink last one during next 3-4 years. Chiseled at first and expanded fruit from there.
