Just a lovely champagne. Granny Smith apples drenched in lemon oil with a smokey chalky finish. I could drink this everyday, but I drank my one and only bottle. Served with my New Years Eve dinner of tuna tartare with Ligurian olives, Colatura, salmon roe, and lemon infused olive oil, spot prawns sautéed with butter and flambéed with apple brandy, and short ribs with parsnip purée.

Final bottle. I usually love Pierre Gimonnet but this particular bottling is not my favorite — it’s a little yeasty, a little bitter, the fruit is somewhat over ripe, and there is a weird sulphur note lurking in the background. My first bottle was pretty good, but the last two have been a complete letdown.

Rich toasty citrus aroma with notes of lemon, lime, orange zest, and guava? Fresh citrus flavor, ripe red apple, some red berry notes too, and an earthy cherry finish. Precise, focused acidity. Not the longest finish, but elegant. Really good, but not the most complex. A little better and fruitier when warm—the yeast masks the fruit when cold. 2015-2016 base, disgorged 7/15/18.
