Once again, my rating is indicative of my preference for this wine - nothing to do with RP/WC criteria.
July 2019 The only other Prosecco I've had was sweet. So that's what I expected - but not what Paolo created! :-(
Aroma - cold right out of fridge - non-existent; as is warmed a bit, light fruits (white grape, green apple, not-quite-ripe pear?)
First evening, with shrimp salad - crisp, nice - but as I said, sad that it was not sweet - or at least sweeter.
Two evenings later, with Thai Fried Rice - tasted a bit drier than first evening - still sparkling.
Next evening - still has bubbles - added a few strawberries this evening. Paired with TJ's Balti Pie - dry (no, I didn't really expect it to get sweeter) but tasty pairing. It did taste just a tad sweeter alone as the strawberries worked a bit of magic.
And the last evening, paired with seared scallops (thanks for the DRY trick, Carol Sarna) and roasted sweet potatoes - and a few raspberries in the glass - slightly tart, still sparkly.
Are you wondering how this could possibly retain its bubbles for four days? A few years ago, Marji and I visited a tasting room (in Saratoga, for a few Finger Lakes wineries) - didn't like anything, but were intrigued by a nifty champagne stopper. So we each bought one of those.
