Small fear before the opening that the champagne is too young and strict as with many non-dosed BdB.
It did not happen. Bubbles still lively but soft. Nose of pear and a hint of spice.
The palate is beautiful, straight without being rigid and with a hint of evolution. Perfect maturity on the white fruits, then a floral side emerges. The wine is concentrated, pleasant because already a little evolved. It is very pleasant to drink because the juice tames the acidity yet quite high so the balance is preserved. Final as saline as chalky on a good length.
Great champagne.

Not a showstopper but more a mediative sort of wine. Discreet nose that reveals aromas of heather honey, unripe conference pear, citrus zest with a hint of marzipan. PnP and tracked over 2 hours with no detectable change with air. A little lacking in complexity and finish maybe but nonetheless a perfectly good bottle I would be happy to drink again and recommend.

With the reopening of indoor dining Monday, a world of opportunity returns. Until then, we have David, his biodynamic balance and slight ox - nice if perhaps lacking complexity

White and champagne theme: Natty nose, very lean and austere despite the ripe yellow fruit. Didn't quite come together for me.

LV14, feels a lot dryer than it is, white fruit, flint. Notably richer with lemon acidity after two days, sulphur, salty, whole. 91-92
