  • A wee bit closed and reductive upon opening, but has really blossomed now after three-four hours. Color is light yellow, apples and some herbal notes on the nose. Good length and acidity, but a touch of heat at the end which isnt to my liking but with food this is a great drink.

  • 60 ml served by the glass from a single bottle. I clearly detect the rusticity of St. Aubin here. On the nose the fight between wood and ripe fruit prevails. Acidity triumphs in the mouth. A wine that needs more time to integrate. It would be foolish not to wait seven years but honey was not made for donkey’s mouth (carrot that wags the dog) ...
