All of this moves steadily in elegant appeal—bright, clean, and weightless. I catch glimpses of marine breeze in the background and decide it plays some kind of role in the impulsion of the object. MOUTH: forget trying to isolate viscera from structure here. At no point is it sweet or weighty. However, the transparent juiciness is something familiar in much older prädikat Rieslings in top form. Allowing it to warm up to >60° only summons determined, savory acidity; it's sticky—the acid is—and it entrains various cured mints, cockle shell, worn brass, and blueberry.
In a great spot, although needs time to gain some complexity. This is a bit more round and less acidic than some 2021's that I've had. I really enjoyed it though. Starting to get the hype, sorta.

"Slow Decanting" this young spatlese over a couple of weeks with the Vinloq System
DAY 1 👃Careens from the chilled bottle with limes and apples plus minerality & petrol 👅Sweetness leads. Fruit, florals and acidity follow. The minerality is there for the finish. The acidity is fresh and palate cleaning. Lip smacking, if you will
The remaining wine was Slow Decanted for 18 days in my refrigerator
DAY 18 This hasn't budged during the interim. Apple, peach, pear with lime on the finish. The standard hallmarks of Falkenstein are present with the extra midpalate density seen in so many 2019 German riesling. Classy. Fresh. Clean
This 2019 is just getting started. It is delicious in this youthful, energetic state. I cannot wait to see where this goes as it develops over time in the cellar🥂
Great from the first sniff. Lots of lime and green apple. Intense acidity gives this a real energy to it. The acid and sweetness really play well together, carrying into a med+ finish.

Still super primary, but wow there is a ton of potential. And already surprisingly enjoyable now. Glad to have a bunch of these.
