Dry with delicious layers of flavors. I liked this a lot and thought it good value relative to Shramsberg or entry-level champagne. More complexity and minerality than I'm used to for California. would buy again at the $32 price point. This bottle went quick between me, my wife, and a good friend and a cheese board.

Nose is almonds, yeast, and citrus. Palate is a bit thick, nutty, sweet citrus peel, and a spice like cardamom, but maybe not quite. On the sweeter end, which tamps down on the acid. Finish is heavy, despite the bubbles.
Flavor profile is pleasant, but it could lose some sweet.

Sunday, December 31, 2000 Slight gold color - a rich golden evening sunlight gold - with loads of bubbles. Citrus and yeast on the nose. Medium bodied, crisp and lean with yeast and toast, and little strawberry. Probably not fair to this wine to have it after the Henriot. With country ham, smoked salmon, strata and chocolate cheesecake with raspberry sauce for dessert. 12/31/00.
