  • 2016 Ca' del Bosco Cuvée Satèn saten was ripe, supple and mineral-driven. The youthful Franciacorta was clear and pale lemon in colour with delicate effervescence. Expressive aromas of lemon zest, ripe red apple and white peach were accompanied by honey, smoke and toast. There was an intriguing sense of salinity underneath, which coupled with the ripe fruit tones and somewhat reminded me of a good Meursault.

    The mouthfeel was dry and medium-bodied, accompanied with a touch of waxiness and a rather high level of lively acidity. There were flavours of grapefruit, lemon candy, apricot and biscuit in a long, mineral-driven finish. The elegant texture and salty minerals. The alcohol level was at 12.8%. The empty bottle weighed 1198 grams.

    From the information on the winery website, the base wine was composed of 85% Chardonnay and 15% Pinot Blanc, so it was technically a Blanc de Blanc. Only the free run juice was used, at a must-to-juice ratio of 43%. The must was fermented in small oak casks and underwent five months of barrel maturation, which was thought to impart honey and waxy qualities to the sparkler. The bottle received the tirage in April 2017, and was disgorged in Autumn 2020.
