Excellent rendition of the Chablis VV. Dark yellow in glass, intense aged citrus, lemon, mineral, flint/smoke, with layers of subtle herb woven in across nose and palate. Opened and other aged fruit--perhaps baked apple, pear--show up with air and time as acidity seemed to ease a bit. Resolved to be beautifully clean and rich, great length and balance. Seems in top form now. Prior note mentioned affinity to Jura chards and I think that is apt, though Chablis still speaks.

Really wonderful, rich and complex Chablis. Buttery, nutty aromas with ripe apples but still a lot of Chablis type minerals. Smells of oyster shells and flints. Lime-like acidity with a grapefruit’s bitterness in the ending.

Oxidative wines are not my style in general, but the quality here is very good, enough to justify the $40. A really nice balance of dry oxidation, acidity, modest apple-orange fruit, brown butter, and Chablis seashell minerality. Paired well with a buttery corn pasta with garlic and turmeric and some of the wine itself, from recent NY Times recipe. This seems just about perfect now, don’t see any reason to age further unless you just really love oxidation.

Pale yellow - honeylike. Constrained nose, very smooth on the palate, muted, long and persistent salty acidity. Perfectly balanced.
