The wine comes from the single vineyard Les Saucours. The plot is located in the south of Savigny-lès-Beaune, on the road to Beaune, at medium altitude, facing east. With its seven-year-old Chardonnay vines, it covers 0.6 hectares and was planted with a vine density of 10,000 vines/hectare. The yield is 35 hl/ha. The soil is characterized by clay and loam on limestone (marnes blanches). The wine was fermented in barrels and tonneaux, aged in used barriques and tonneaux for 15 to 18 months on the fine lees. The Chardonnay was pressed in whole bunches.
The white Savigny from Climat Les Saucours is now in its third vintage. From comparatively young vines, the wine delivers a straightforward, bright and vibrant image of limes, lemons, young pineapples and crisp pears and peaches, chalk and oyster shell. There are also subtle notes of clover, coriander and verbena.
On the palate, Les Saucours appears fresh and sinewy with bracing citric acidity. The Burgundy offers mainly yellow and green notes of citrus, is very juicy and salty and therefore mouthwatering with a finish that is again very citrus and iodine, ending with an acid arc that has offered tension and punch all along.
