  • 40th anniversary tasting (L'Esprit du Vin - Axelborg): My notes from this fantastic gigantic tasting are in general extremely short (because of the many wines) but with ratings. We spent a whole day tasting and tasting quality wines.

    This wine: Tasted against SSA (i.e. the natural wine version of the same cuvee). SSA is as expected for natural wine based on my experience - and in contradiction to the traditional cuvee - fruit-juice-like. The traditional is more savoury. In this case I rated SSA 86 and the traditional 85.

  • Red berry and forest floor for days. Slight effervescence to the palate? But no sense of secondary fermentation. Love this.

  • The Pinot Noir comes from the Premier Cru site Aux Fournaux in Savigny-lès-Beaune as well as from a part of the site that is only declared as a Village The commune is located about three and a half kilometers northwest of Beaune and, with 383 hectares, has one of the most extensive vineyards in this region. In the Premier Cru site of Aux Fourneaux, Domaine Chandon de Briailles owns 1.68 hectares on an eastern exposure with vines more than 60 years old. The soil is clayey and deep. In the upper part of the plot there is also lime in the topsoil. Spontaneous fermentation took place in wood cuve with 100% whole cluster. Then it went by gravity into the barriques and tonneaux with a small amount of new wood. This was followed by about 14 months of aging without further agitation or racking. Filling was done with minimal sulfur, mostly straight from the barrel.

    The Aux Fournaux site is characterized by a clayey and deep soil. This is evident in the aroma, which is warm and supple like a forest floor in summer where you have a picnic, where there are fresh plums, raspberries and wild strawberries, but also cinnamon, some wild berry yogurt and peonies from the neighborhood.

    On the palate, the 2019 Aux Fournaux comes across as silky, elegant, open and inviting, with lush ripe dark fruit at first, but countered after a few moments by crisp spice and remarkably fresh acidity. What seems gentle at first becomes tighter and more demanding with each passing minute. Along with the ripe dark fruit, notes of underbrush and leaf, of some wood and tart chocolate show up as well, while all of this is kept in check by that lively acidity. This is a wine that can easily age a few years before it will have fully found itself. And it has a lot of potential!
