Dark sweet velvet fruit. Really nice density and perfume for the level. Inner mouth perfume and fruit delineation is there. Open in the way of the vintage. I've become fond of this bottling in their line up.

Thomas Bouley is one of the most talented of the new generation of producers in Burgundy. But this wine on the first day opened was essentially undrinkable because of the jammy, overripe flavors and aromas -- something I've found in some other 2019 Volnay from top producers, e.g., d'Angerville's generic Volnay 1er Cru. This is surprising given the altitude of many Volnay vineyards, and in particular, Bouley's Clos de la Cave. By the third day, this wine had settled down somewhat, just showing fullness and dark fruits with some elegance. It could improve over the long term -- I've seen that happen with other ripe vintages in Burgundy, but if your tastes are like mine, not a wine to drink until sometime in the 2030s. 13% stated alcohol.

The Pinot Noir comes from the 0.68 hectare Clos de la Cave parcel above the property at an altitude of about 300 meters between the Clos des Ducs and La Cave. The average age of the vines is 38 years. They are soils with sand and clay over a limestone base. Fermentation took place in open vats for about three weeks, aging over 20 months in barrels. The percentage of new wood was 30%.
Medium garnet red, slightly transparent.
The 2019 Volnay "Clos de la Cave" is as fragrant as it is serious, initially dominated by some violets and rose petals, cherries and cherry pits, hints of clove, orange peel and herbs. It's an almost ethereal scent that rises from the glass here, combining with a bit of earth, stone and some foliage.
On the palate, similar to the nose, it is apparent that the forest edge location provides coolness in the wine. The Pinot Noir offers a lovely freshness in both the high-toned fruit and the brilliant acid structure. One is reminded here of fresh raspberries, a few cherries, barberries and cranberries, dried herbs and foliage. The wood is restrainedly present, the tannin very elegant but definitely firm. This is a wonderful Village, but just not only that, but also already an expression of a certain place, worked out with impressive precision.
