Sunday lunch at home. Various sushi this afternoon (tuna; prawns; scallops; eel; beef; truffle with the usual vegetable and fruit pairings). Time to crack a bottle of this, by Coravin, because my fiancé is still pregnant! What a joy, I second Xavier’s comment regarding carbon dioxide, the Coravin makes this extra clear. However, my bottle is not aromatically closed (perhaps difference between April and August). This is a real thirst quencher! Very succulent, mineral and well-balanced. Will definitely buy more bottles of this new cuvée...

A blend of Chardonnay, Pinot Blanc, Pinot Gris and a whisker of (Feuervogel) Silvaner, aged in used barrels from Dagueneau and d'Auvenay, 12.5% ABV. Diam 10. Bottled with a lot of carbon dioxide, so I decanted it forcefully. At this very early stage it still keeps a lot hidden aromatically, but the crystal clear Keller style shines through, the micro-oxygenation in the wood gives a relaxed and airy feel, and the balance and stony, minerally energy bode well for the future. The fruit is in the yellow spectrum (mirabelle, pear) and there is a hint of nuttiness, with hints of spice and green herbs. Gentle bitters guide the wine to its finish. I wouldn't mind having a bottle (or two) with 'Asperges a la Flamande' this spring, but we will have to wait at least 18-24 months before this new cuvée really starts to show itself. Provisional score.

Better let it rest for 2-3 more years. Great potential though.
