  • Aromatic and elegant on the nose with chamomile, peach, lemon peel, bread dough, and struck flint. Fantastic texture on the palate with some great structure and a long finish. A serious, refined wine. Drink now or hold.

    WSET notes:

    Pale lemon.

    Pronounced on the nose with peach, lemon peel, bread dough, chamomile and struck flint. Youthful.

    Pronounced and dry on the palate. High acidity, medium body, medium alcohol, long finish.

    Can drink now but has potential for ageing.

  • Lemon, almonds, struck match, some herbs, spices and orange zest on the nose. The profile is so expressive on the palate, entering with rich but precise lemony fruit and continuing along the spine of acidity to a clean, textured and long interesting finish. I could drink this all night long!

  • The Somm at Wolf in the Fog in Tofino BC recommended this wine. This is definitely a food wine. We paired it with Halibut sausages in a Thai peanut sauce and it was a wonderful pairing . It also paired well with our other seafood dishes. It’s made with the Palomino grape which we didn’t realize at first but it has that sherry old vine taste with great acidity and minerality. Not a huge nose, but we didn’t give it much air before we dived in . It’s very unique and we highly recommend it .

  • 100% Listán Blanco (Palomino). Grown on volcanic soil at 350 - 550m above sea level. Fermented and aged for 11 months in neutral 500l French oak barrels and 25hl foudre. 12.5% ABV. Medium yellow golden colour. A reductive/sulphury note blew off with some aeration. Citrus, white fruit, a complex herbal aspect, smoke, crushed rock, and saline minerality, with lively acidity and superb length. Medium-bodied, smoothly textured, very mineral and very fresh. A great wine! Very young. Drink with aeration, or hold.

  • If there was a juxtaposition between reductive and oxidative this would be it.. in a good way! Balance of both qualities somehow with really good fruit on the plate and medium acidity but a long finish. I enjoyed this but I can see how some may not
