Medium-pale straw with a steady stream of medium sized bubbles. Light nose of chalk and green apples. Light and fizzy in the mouth leading to a lot of lift. A lot of a acidity. Bone dry and very linear. Lemons, green apples, a bit of underripe pear, and chalk. Very clean and refreshing finish of chalk, green apple and pear skin, and saline. As it warms, a touch of yeast and bread shows up.
For $20 at retail chilled - this is a good value. I just want a touch more complexity to it.

Pale yellow with good mousse. Nose is fresh, fruity and autolytic, with notes of citrus, green apples, agave and crushed chalk. Mouthfeel is somewhat austere, fresh and fruity, with nice acidity and notes of citrus, green apples, agave and crushed chalk.
With 4,5 years on the lees, this is serious stuff, an excellent cava. Perfect for aperitif, but goes well also to food.
