Very nice persistent mousse, quite mouthwatering, with lovely flavors of apricot, brioche, apple, and white flower. I don’t feel much confidence with my analysis of sparkling wines, but I quite liked this.

A private dinner (Restaurant Mont Blanc, Amsterdam, NL): A blend of 60% Jacquère and 40% Chardonnay, whole bunch, direct press, fermented in stainless steel, aged for 8 months on the lees in oak and stainless steel, prise de mousse sur lattes between 24 and 36 months, brut nature, zero dosage, 12.5% ABV. Quite a full yellow colour, light aromas of white flowers, acacia, pine and bergamot, gentle mousse and good volume on the palate, good flavours and length.
