  • Writing TNs on the 2nd glass - which was about 30 minute after opening. The PnP was a bit of a mess, give it some air.

    After pouring, the stream of fine bubbles is very aggressive but quickly calms down. Nose of green apples, lemon, yeast, and spices. Uplifting, a lot tension from the acidity, and well structured. Palate of green apples, lemons, underripe stone fruits, caramel, vanilla, pie dough, white flowers, and spices that veer to green herbs. Long refreshing acid driven finish of lemon, pineapple, caramel, limestone/seashells, a dash of green herbs, a bit of yeast and a bit of flowers.

    After a glass I notice a waxy/creamy texture building up. Along with a persisting white flower note.

    As always, lovely bubbles from UTW.

  • Cider vibes from this one. Very bready /yeasty and toasty with lots of minerality throughout. Soft white grape, peach, pineapple, green apple pear & wet stone. I get a slight minty toothpaste thing going on as well. Creamy texture

  • Yeast, mellow pineapple, apricot, orange, notes of chervil...acid is tamed and center lane - just perfect. Nice body, integrated and balanced. Great sparkling.

  • Floral, citrus, pineapple and yeast aromas. Vanilla, pineapple, peach, meyer lemon, and apple flavors with a fresh strawberry finish. Saline / mineral notes throughout. Clearly well made and very interesting - love the strawberry finish in particular.

    A bit disjointed at first, but really opened up after 2-3 hours of air. My last glass was the best. This is drinking well now but will continue to improve in the near-term.

  • Nice young sparkler. Aggressive bubbles, with bright structured notes of lemon and brioche. Slightly toasty in the mouth, the acids on show here, with green apple and tangy citrus. Fuller in bodied as well, it coats the pallet with a waxy creamy finish.
