  • Meta in Singapore, together with Alex and Ken. No formal tasting note. Recommendation from the sommelier to pair with the first 5 snacks on the menu. Decanted as initial sip was still very racy and young. Beautiful nose with lots of cherry and red apple. High in acidity so only starting to open. Ample mouth, watering salinity, cream, cherry and apples. Perfectly pairing with the amuses bouches. Very likeable and do not hesitate decanting at this point.

  • ⭐️⭐️⭐️⭐️
    VDS 2-76-1. Champagne Clandestin Les Semblables Austral
    (끌랑데스땅 우스트랄)
    * France > Champagne
    * Pinot Noir 100% (Blanc de Noirs)
    * Recolte(Vintage) : 2019
    * Degorgement : 10. 2021
    * Dosage : Zero (Brut Nature)

    첫 노즈에서 아주 싱그러운 과실이 인상적이였다. 풋사과, 오렌지.
    한 모금 입에 넣었을 땐 깜짝 놀랄 정도로 산미가 강했다. 어린 크룩/크리스탈 이런 산미가 아니라 미네랄과 땡땡하게 뭉쳐져서 쓰게 느껴질 정도의 산미. 한 모금 하고는 이거 오늘안에 다 못마시겠다고 섣부른 판단을 했었더랬다.
    잔에서 30분쯤 지났을까… 땡땡했던 산미는 지금까지 느껴보지 못한 세련미 넘치는 산미로 변했다. 옥시데이트함도 마냥 산화된 어설픔이 아니라 선을 넘지않는 절제된 옥시데이트. 시간이 지나자 노즈에서 고급 비스킷 까지…그리고 조미료역할을 해주는 미네랄...
    밸런스, 매력, 개성 모두 출중하다. 공장형 샴페인에 물린 사람은 꼭 드셔보시길…

    "클래식의 이성 + MZ의 감성 = Clandestin"

  • Compared side by side with an Austral L18 release from the previous year. The L19 (2019 base vintage) has a more aromatically intense nose on pop and pour but is also more one dimensional. The L19 also has a more lean body with brighter acidity and a slightly unpleasant bitterness on the finish compared with L18 which is rounder, richer, more vinous and yeasty. My wife prefered the freshness of the L19 but I definitely preferred the L18 by a long shot. My wife and I both agreed that the L18 and L19 were very different Champagnes.
