  • Production dated 2022 June, 17.5% ABV. 55% polishing ratio. From 1.8L bottle produced in PNP into Snowpeak Titanium sake cup ("Flower" day): Pale golden with some very fine deposits.

    Served at room temperature (25.5C): Signature notes of meat-like rice and floral notes that is reminiscent of the likes of Aramasa. Bone-dry with some very fine white spices on the finish.

    Slow heating over water bath to 40.0C: Clearly more mellow in texture and less 'spicy' than the room temperature version.

    Slow heating to 50.0C: Starting to open at this stage with superbly mellow texture and lots more umami at this stage.

    Slow heating to 55.0C: Between 50C and 60C in terms of body and texture.

    Slow heating to 60.0C: Fully open in terms of integration of the flavor profile, body and texture in my view although complexity has not significantly improved.

    Slow heating to 65.0C: More umami and caramel notes from the Maillard reactions.

    Reserved for long term observation across multiple tasting notes. At this point this is 94 points and as expected pairs very well with food.

    About 1/3 left with multiple tastings, over ‘room temperature’ storage over 3 weeks. Tasting at ‘room temperature’ about 25C: more umami and meat-like rice notes, very pleasant already without any addition heat treatment at this stage.
