Nose was very similar to cognac. perhaps a slight nuttiness as well. Good full body and decent acidity. Flavors are hard to pin down but there is a definite hint of beef brodo on the finish.

80% Chardonnay, 20% Savagnin (late picked) raised in barrel for two years under the influence of a veil of flor. Medium yellow-gold in the glass. Very individual nose (as expected...); notes of freshly shelled hazelnuts with a salty, yeasty tang. Bone dry on the palate with quite intense yeasty, soapy notes with some bruised apple and blanched almonds. Very similar to an Amontillado-Fino. Ideal partner for cured ham or Manchego style cheese.
