  • Bottled November 30, 2022 after 26 months of aging in ovoid concrete tanks and vats. Unfined and unfiltered with no added sulfites.
    I first had the opportunity to try this with the producer back in early November 2022 before it was officially bottled. It was freaking awesome but much to my dismay, it was not available for sale yet. So of course when I saw it at my local wine merchant recently, I had no choice but to pick up a bottle (which I naturally couldn't wait very long to taste). It is even better than I remember! Although it is indeed perfectly gluggable, one must attempt to not drink it down too quickly as it does improve even more with a bit of aeration.

    APPEARANCE:
    Color & intensity: medium lemon

    NOSE:
    Intensity: medium (+)
    Aromas: lime, yellow apple, lemon, green apple, pastry, flint
    Development: developing

    PALATE:
    Sweetness: dry
    Acidity: medium (+)
    Alcohol: medium
    Body: medium (+)
    Intensity: medium (+)
    Flavors: lime, yellow apple, tangerine, lemon zest, crushed flint, pastry, hint of salt
    Finish: long

    CONCLUSIONS:
    Quality level: very good
    Potential for ageing: can drink now, but has good potential for further ageing
