  • Stood out on the quirky list at Le Mermoz, Paris with its sibling the La Paille Perdue this the Absolue just screamed to us “me me me”. And indeed worthy of of the effort albeit with hindsight we should have ordered both to compare .
    Rich but not heavy, touch rustic but also elegant, nobly oxidative, nutty, soft rich honey texture. Effortless beauty here and really impressive. 93

    75% Chardonnay, 20% Savagnin , 5% Poulsard. Bottled after 5 years in old barrels and undergoes a much longer drying period of 7 months which results to 421 g/l residual sugar and 6% Alcohol;thus as is below the 14% minimum misses out on the appellation “ Vin de Paille” status but frankly a worthy omission for something so nice. Fk Dogma.
