  Really fine mousse and it’s also quite persistent.
  Bready and pineapply nose with just a little bit of volatility. There are notes of cottage cheese and hard aged cheese, savoury cream puffs, cucumber, cream apple, and subtle passionfruit.
  On the palate, it’s medium+ in acid and medium- in body with a fair bit of bitterness. There is yeast and and flowers. Like if you chew on them, lol. Grapefruit comes forward the most pronounced.
  Medium-long finish with bitterness and acid.

  Eye: Light gold. Rapid small-medium bubbles.
  
  Nose: Dough, tropical fruit. Caramel.
  
  Palate: Bright acidity. Grapefruit pith, pineapple, tropical fruit. Pear and peach. A touch of saline.
