    Round and creamy with roasted nuts and defined delicate honeyed character. Crunchy apple lift. Balanced and elegant. Lovely.

  • Textbook straw color, nice mousse with larger bubbles. The aroma is fresh, lively, and delightful, sporting ripe apple, pear, and lime zest along with wet stone grist notes showing great mineral structure. A wee hint of vanilla signals gentle oak treatment. A little buttery yeastiness like fresh baked croissants.

    On the palate the tension is magnificent with bracing acidity akin to lemon and lime with a nice touch of malic acid evoking verjus. The primary flavors of apple and pear fruit dominate along with vanilla, whispers of spice, and long-fermented bread dough.

    A fresh style and as an N.V. Almost certainly designed to be drunk on release, the acidity and complexity of this brut have me wanting to set back a few bottles to try over ten years or so. Currently its freshness makes it a great aperitif or reception tipple. I’d drink this with almost any food or on its own. I do think it’d be especially nice with cheese, nuts, and charcuterie, or potato chips and caviar. Drink now or cellar up to ten years or so.
