Pairing dinner at Tetsuya (Tetsuya's, Syndey): Paired with a confit of Tasmanian Ocean Trout. Pale yellow straw, with a nice golden tinge. Very aromatic, super sweet nose of canned lychee syrup and musk. Sweet and rather alchoholic tasting, with some citrusy notes and some fritz on the tongue. Finishes very dry. This was pretty good, but needs a better sense of balance and finesse.
