  • Opened this to make up for an '08 Dauvissat-Camus 1er Forest that was completely oxidized and made me very mad. This was very 2007 ab initio, very tight and reticent, lemons and razor blades. Put the cork back in and brought it to Quality Italian. When poured, still very brisk on the palate and tight, showing lots of acids, reticent. After a couple of hours this unwound and showed lemon notes on the palate, with grapefruit pith, minerals galore and saline notes. By the end of the meal, this relaxed and showed some more gentle sea breeze notes. Overall, a lovely, complex, pure, genuine expression, exactly what I want in Chablis. An '07 drinking completely on point, with room for more aging, providing you want to play the premox risk. With Jim W and H at Quality Italian.
