  Wow, quelle suprise. Seamless, light, and clean- a bit of barnyard, garrigue, and cherry cola on the nose. Palate of cherry cola; fresh and herbal- everything so integrated. Just a hint of puckering tannin. Finish bright and herbaceous. Beautiful bottle approached with no expectation. Never had a poor sablet wine… magnificent pairing with prime sirloin swiss steak braised with peppers, onions, tomatoes and some good dijon.
