  • This is a Cab Franc made especially for the Herbfarm by Buty winery. A huge fan of Buty, so I was excited to try this. And, it met all of my expectations and then some. The usual suspects of green peppers and graphite were there but in the background of some lush black, blue, and red fruit. All just lightly oaked. Would have never thought of paring a CF with Salmon but it was an amazing compliment to Slowly Roasted Red-Wine-Glazed King Salmon with English thyme, and Salmon Sausage with Carmelized Onion Sauce. Huge ripe fruit in this wine but not even close to being over the top. My fav CF from WA state yet. Really enjoyed the lack of big oak and the looooong finish. Hope their 06 Champoux CF is close to this.
