Very shy on first day, almost mute. Flavors of apples and nuts. But not much else. Didn't have this again until day 3, better with more pronounced apple, nuts, flowers with a bit of tannic bite. Had some left over in 187 ml bottle on day 5. Best yet, really nice aromas of gala apples, more flowers, nuts. Flavors follow w more pronounced and seamlessness of flavors. Flavors are more mellow as well. Really like it at the end.

From memory. Trebbiano 45%, Malvasia 30%, Verdicchio 20%, not sure of the other 5%. But made by Trappist nuns in Lazio with consultant Paolo Bea. From memory. Nice citrus flavors with earth, nuts and tannins. Nicely done but didn't have the verve and nerviness of previous bottles. 13% abv.

Totally solid bottle of wine. Nice acidity, interesting notes due to wine production method. If you want more interesting, go for Bea's own label. Did enjoy and would buy more, but it's closer to table wine than anything truly outstanding.

This wine is an enigma; a perfect Halloween wine. The color is unlike any that I have seen before with the exception of perhaps a decades old Marsanne. Imagine Scotch or Irish Whiskey in a wine glass -- orange, gold brownish hues but only three years old.
There are definite notes of apricot but the fruit is quite subdued. There is an absence of sugar or citrus. This wine might be perfect with seafood of the Italian coast especially with lots of olive oil and garlic. On its own, it remains an enigma.

(Monastero Suore Cistercensi Lazio Coenobium Rusticum) Medium golden yellow color with 2 millimeter clear meniscus; intriguing, baked pear, floral, orange cream nose; tight, tannic, herbal, fino sherry, mineral palate, a little austere now, needs 3 years; medium-plus finish
