  • Mid-Week Chill (Tung Lok Signatures, Central): I really liked this - still too young, but it has developed to the point that I would hardly recognise it as the intensely ripe, rich wine that Burghound described a decade ago. When we had it last night, it showed an absolutely lovely nose, full of high-toned dark cherry scents, alongside earth, meat and spice sprinkled over with plenty of floral notes. There was still a layer of oak floating around in there, but this had started to integrate into the rest of the bouquet. However, developed as the nose was, the palate was still noticeably young and tight. There was a nice depth of dark cherries, some plummy flavours, but all very nice balanced with good fresh acidity for a 1999. Lots of quality, tons to like - my favourite Burg of the night. It was still just that bit austere towards the finish, with a layer of tannins and some bittersweet bramble and wood. This opens up with time to take on some fruit, and it was overall a very nice wine to drink, yet I would really give it another 5 years. Good stuff.
