Well, I had planned for VII to be the final Offlineorama, but then the owners and chef at Circa prevailed upon me to continue Circa night because they like the event so much.
Here are my initial thoughts.

Finding restaurants who are willing to let us have a private room has become nearly impossible (unless we spend giant bucks per person). This is why I’m posting now—I needed to get Circa booked. The Charleston dining scene is crazy; reservations at top restaurants sell out up to a month in advance. “Hot” restaurants neither need us, nor really want us. There is much more money to be made hosting corporate events and destination weddings. I do have a few ideas.

Burgundy Thursday
The Wine Room at Red Drum Gastropub, Mount Pleasant

It may sound odd to choose a "Southwest" restaurant for Burgundy Thursday, but Chef Ben uses a lot of French technique, and he is a Burg guy, along with GM/Bev Director, Charlie. HRH and I ate there last winter with a couple of CTers and were blown away.

Burgundy Grand Cru (or the very best 1er vineyards/producers from TOP YEARS). As always, no 2004 or 2011 red, and no Camus.
Also no Corton (unless it's DRC)[:D]
I can narrow the terroir choices if attendees prefer.

HRH and I might even save our cereal box tops and spring to stay downtown. Since Chef Marc always does a five course menu, I will propose the following themes (up for discussion, of course).

Northern Rhône vs Rayas would also be pretty crazy.

All declared wines must fit the quality and categories that are established. Early declarers set the themes; late declarers will have to source (I will declare early, but will still have to source). Remember, if we have more than 12 participants (we will), all declared bottles have to be 2x or mag. Also, we might need to cap the number of attendees. >24 simply makes no sense.
Since I will be retired I can set up golf one day at Snee Farm; Mason can set up golf at Wild Dunes.

I also have a truffle source through the importer we went to Italy with this past October. I'll ask him for a sample price list today.

We are definitely in. I will rummage through the offsite today and see if I can find anything interesting. As I have always said the food cost is a rounding error for this trip when you consider the costs of wine and travel. Make it rain with truffles.

OP updated with Burgundy Thursday info.
The wine room holds 20.
$800 F&B minuimum and $100 for the room.

No brainer IMO

I imagine Chef Ben will go all pairing crazy with a special menu, especially when he sees the stuff WE bring to the table.
Ben and GM/Bev Director, Charlie, are old friends--we probably ate there the week they opened.
btw, if any of you know TALL Chef Tim at Disney World (he used to be Flying Fish, but is now running a restaurant group), Tim helped Ben open RedDrum--they go way back.

Chime in "YAY" or "NEIGH" [:D] quickly so I can book the room.
