I can readily agree with the "700-900 bottle count sweet spot". We've been at the 700 level for about a year, and current drinking habits put our yearly consumption between 140-150 bottles. Buying 12-18 bottles a month keeps things level and having continually bought wine over the past 10 years gives us the ability to see wines evolve into and through their drinking windows. While we do have a few dozen "showcase" bottles tucked away for safe keeping, we've always felt wine was something to share and enjoy. With us buying '11, '12 and '13s right now, it's nice to know we have plenty '05, '06, and '07s to open and enjoy.
