Jadot (and Clair Dau) Chapelle-Chambertin Dinner with Thibault Gagey (Sepia - Chicago IL): Single blind alongside the CD 1971 Gevrey-Chambertin 1er Cru Clos du Fonteny, I correctly identified this as the Capelle based on its greater sheer concentration. This was more mature and earthy, yet still very clean and precise. Not quite as complex as the Fonteny but more heft, and this persisted longer in glass.

We only gave these two CDs a few minutes of air before serving, and that helped because this started losing steam after 30 minutes in glass. Exactly what you would hope to be able to taste from a great vintage that has generally aged well.

With time the fresh fruit ascends, and this just kept getting more deep, broad and intense. A sensational old Burgundy strutting its stuff in a late peak window.

Medium ruby in color with some bricking & clearing at the edges. Moderate & subtle nose of mature, ripe fruit aromas of cherries, strawberries & cranberries with overtones of floral notes of roses & earthy/dusty notes, spices, minerals & a hint of sandalwood in the background. Medium bodied with a good concentration of matured, well balanced & smooth textured, ripe fruit flavors of cherries, strawberries & cranberries, herbs & minerals. Long lingering smooth finish. Drinks quite well at 40 years of age & is at its peak of development, so drink up. Ullage was well below neck/shoulder slope & cork was saturated & crumbled upon opening. A good example of a well-aged Burgundy.

Resolved structure but enough to keep things fresh and lingering. Just a tick behind the surprising '77.

Brilliant old Burg aromas and flavors of mature cherry and berry with leather, cooked mushroom and braised meat, this kept unfolding and showing more dimensiomality each time tasted. This shocked everybody when the vintage was unveiled, except for Frédéric, who thought this was the 1977. The star of a brilliant trio.

It held up nicely through the evening and even freshened up slightly, but it was the laggard of a brilliant trio.

After this difficult vintage the Clair Dau estate was sold to Louis Jadot. Clair Dau it turned out was a fine success for the vintage. On opening the wine looks perhaps a bit past its prime., On the palate, not at all the case. Wonderfully extracted and rich on the palate in the earthy lightly beefy sense. Super length.
The wine was purchased on release and stored in a refrigerated cellar at 44-47 degrees since. By and large, not a wine to take a flyer on at this point.

Beautiful. Still very fresh with fruit very much in tact. Lots of acid. After 30-45 minutes in the glass, this started to taste exactly like a great old Nebbiolo.

Dried longan-suffused nose, sous bois, prune, spices and a hint of herb. Just enough energy and a bit thin on the palate with medium-bodied flavours of salt prune. Warm and acidic finish with wood flavours and a touch of oxidative notes. Nose better than palate. The last glass with a bit of sediment in it is the best. Falls quite short compared with the same wine tasted in 2019.

Rare and unique 1982 for the birthday⭐

A wine from a spectacular producer that is now only in history.

1982 Clair-Dau Clos-Vougeot

Pale tawny color. Broad noses of dried hawthorn, cherry liquer, leather, farmyard, oak spices, wet stone, toffee and expresso.

Still holding up with its bright acidity, noticeable chewy tannins and rich flavour. Savoury and minerally with mushrooms, truffles, sour cherry and dried red fruits.

Past its prime already but then it is a treasure to drink up history.

Red currant, herbs, iron, sous bois, meat and cinnamon. Very good fruit purity for a wine at this age. A very classic burgundy that is just right for people who appreciate his/her burg with age.
