Introduction

10 of us gathered at Per Se over Memorial Day weekend; to say it was a magical evening would be a bit of an understatement.

Flight 1 - -----------------------------------------------1999 Bollinger Champagne La Grande Année (1 note)

Paired with Salmon Cornets, Oysters and Pearls, Truffle Egg Custard.

This bubbly has delivered the goods every single time I have tasted it, and I see that we have went through the entire case in just under 8 months! A lovely mousse; notes of brioche, roasted nuts and crushed rocks; very generous on the palate -- quite easy to drink! -- with an impressive and refreshing finish. Bravo!

Paired with Big Island Hearts of Palm "Bavarois" and carried to the next course, "Pave" of Pacific Blue Fin Tuna

I positively adored this wine! Aromas of ripe (and slightly kinky) white fruits, chalky earth, and spice. Medium-bodied on the palate -- very light on its feet for such a flavorful chardonnay -- with good structure, crisp acidity, and a long and focused finish.

Quite viscous, and a bit darker in color than the '06 Chassagne-Montrachet which preceeded it. Heady notes of very ripe white fruits, toasted oak, and figs. Medium to full bodied, with off the charts concentration, a round and generous mouthfeel, and impressive quantities of fruit. Surprisingly good focus on the finish, and and absolutely perfect match with the butter poached lobster mitts!

The fill was into the neck and the cork was sound. A deep golden color, with an incredibly exotic bouquet of candied white fruits, honey, orange marmalade, flowers and vanilla. A bit lighter on the palate than what I was expecting -- it had the visocisity of motor oil -- but with layers and layers of flavor and a jaw-dropping finish.

The fill was into the neck and the cork was pristine; the sommelier at Per Se decanted this about 1 hour prior to service. A lovely deep red color with a hint of garnet at the rim. I am completely berzerk about the bouquet of this wine! Intoxicating notes of black fruits, star anise, roasted herbs and tapenade (Bruce said green pepper!) jumped from the glass; heavenly stuff! Medium-bodied, with a lush and velvety mouthfeel, incredible depth and impeccable balance. A wonderfully round and expansive finish; what a wine!

The sommelier at Per Se decanted this for us about 1 hour prior to service; a youthful purple core, turning to red at the rim. A striking bouquet of ripe cherry, plum and lavender; hints of vanilla and chocolate. Quite opulent for such a young Cheval Blanc -- a very hedonistic sort of wine -- with a silky mouthfeel, gobs of fruit, and a heady finish.

The fill was base neck; James decanted this for us about 1 hour prior to service. A purple-ruby core, turning to ruby-red at the rim. The aromatics have developed considerable complexity over the past several years, as in addition to the ripe dark fruits scents, I detected notes of fennel, roasted herbs, and truffle. Medium-bodied, with good balance and impressive delineation on the finish. While certainly not as opulent or outgoing as the '90 Lynch Bages which preceeded it, the '88 Mouton is clearly a fine wine, albeit a more "classic" style.

A very ripe and rich late harvest zin, with notes and flavors of raisins, plums and chocolate. Went quite well with the "peanut butter cup" at Per Se!

Closing

The food, the wines, the service and the company were perfect; I've never had anything less than a incredible experience at Per Se!
