Mature Premier & Grand Cru Chablis with Richard Brazier

Introduction

Richard Brazier of Ancient 7 Modern wines (http://www.ancientandmodernwines.co.uk/) presented a flight of GC & Premier Chablis across different maturities and terroirs.

A few interesting take away points:

1. we really drink good Chablis far too young. These wines can easily go 10yrs with no issues and develop nicely while holding on their fresh and vibrant side.
2. Like the main Burgundy Rule, producer is more important than vineyard
3. Unlike White Burgundy, here the producers never reduced sulfur so wines have less of an issue with premox (still we have had our fair share of flaws).

2011 Vincent Dauvissat (René & Vincent) Chablis 1er Cru Vaillons France, Burgundy, Chablis, Chablis 1er Cru

Young from color to palate. A bit sharp and in a way aggressive due to the acidity. that is big and not really polished. On the flip side it has a quite intense honey nose too. Mineral for sure but in a way lacked elegance at this stage. Hopefully time will help. 90 for now

Quite the youthful color. Glossy. Quite on the fatty side , especially for a Chablis and was more of a generic burgundy of good quality than a textbook Chablis. Good acidity, rounder feel, polished acidity and not sharp. Ripe and juicy not so much a lot of oak here but definitely has seen oak in its elevage, light touch of honey, lemony feel. Good wine and we would suggest one drinks this sooner than later. 90-91

Side by side with the 2005 (Papies 93)
Youthful and bright still from color to palate. A touch of sulfur on the nose but went away easily. Quite a bit of fresh, zingy acidity, mineral with a grippy feel , a bit unpolished on the edges but this is due to youth. Nice concentration and energy and a very promising wine. 92

Side by side with the 2008 (Papies 92 albeit on the youthful side while this 2005 felt bang on the money)
Still very youthful in color!. Firm acidity but very polished and elegant with a round feel and quite inviting at this stage. Nice depth, good balance, and a bit of mineral finish. Very good wine and feel right to be enjoyed now albeit still has a lot of life in it. 93

Surprisingly ripe, apple, touch of caramel and feels to have had a relatively high amount of oak in its elevage. Softer wine, riper, good concentration , light exotic fruits, honey. Young but also quite silky. A very nice wine but lacks the feel of chablis for us. Solid wine but not our favorite. 91

the colour points to a young wine but the wine is well evolved and vs the others we have tried on the day this felt a lot more older in comparison/extrapolation (especially vs 2008 Fevre MdTonnerre - Papies 92)
Honey notes, mature fruit, decent acidity but lacked elegance and a pleasant feel. 88-89 from us

The nose points to its age but still the wine has an energy and vibrancy to it. Honey notes, light citrus, some evolution of the fruit of course and generally felt like a well aged well matured wine with energy to make it enjoyable. We would advice one drinks sooner than later. 91-92

Corked. Did allow us the opportunity to use the cling film theory ( put cling film in the wine, swirl and this takes away the corky feel). The corky feel indeed left but the wine had a nail varnish nose post that so not sure of the benefits. Fun game out of a bad bottle still.

Side by side with the C. Moreau Le Clos 2010 (Papies 94) and really very few differences between the 2 wines at this stage. The Valmur had more length.
Proper grand cru, elegant. Light touch of honey, floral. Effortlessly balanced , silky and with a lightness. Still quite a bright and spirited wine full of energy but very well polished acidity adds an effortless charisma to it. Its like it is saying i know am a grand cru and i don't have to shout it. 94-95

Side by side with the C. Moreau Valmur 2010 (Papies 94) and really very few differences between the 2 wines at this stage. We liked the valmur a touch more at this stage.
A very serious wine , like it sibling the Valmur we wrote "Proper grand cru" on the tasting sheet. Very elegant effortless and not a show off wine, it has class and doesn't have to shout about it. Silky and polished on the acidity , a lot of energy but really light on its feet . Very very good. 94-95 and this is at the beginning of its drinking window
