Wine Dinner at Carbone

Introduction

This was my first time at Carbone courtesy of my friends at Brooklyn Wine Exchange. The resturant was kind enough to allow us to bring four flights of wine from my cellar and built a wonderful procession of courses with which enjoy them. The food was amazing, the gracious staff could not have made us feel more at home. It was a wonderful way celebrate 1955, my birth year.

This flight accompanied by an amazing variety of Crudo

White
1999 Coche-Dury Meursault France, Burgundy, Côte de Beaune, Meursault

Bright medium yellow center. Initial bouquet of white fruits swimming in a sea of salinity and minerality which stood in contrast to the round, buttery initial nose of its fight companion, a 1999 d'Auvenay Puligny Montrachet Folatieres. The palate showed a similar profile, bright and delineated white fruit, lively acidity, crisp texture. Still taught and youthful. Over the next two hours this picked up weight, texture and complexity adding some buttery popcorn notes that were more dominant in the Folatieres. A simply delicious white burgundy, hitting way above its a "village" status

Medium yellow color, the nose was filled fresh ripe fruit, hints of honeysuckle and parifin. Initially far rounder and richer profile than its flight partner a 1999 Coche Dury Meursault. This wine has oodles of oily, rich layers of apricot, peach, butterscotch flavors with enough acidity to balance the weight. Lovely finish. These two whites started out at opposite ends of the spectrum rich and round vs crisp and focused, both delicious but oh so different. After and hour or so they became closer in style, the Coche picked up some weight and Leroy lost some of its initial richness and became more defined.

Pale clear rosy appearance, very heavy sediment, almost like an old port. Rose petals laced with earth and smoke components. Remarkably fresh fruit for age, soft red fruit, hints of balsamico and earth, mature but clearly still vibrant. Good acidity and balance carry this remarkable wine quite well. Still there after an hour in the glass, hard to believe it's 62, bravo

4th of 12 bought on release. Beautiful youthful deep ruby core minor lightening at the rim. Somewhat reserved nose of dark red fruit, layered with forest tones and spice. Palate was consistent, tight core of deep red fruit, framed by noticeable acidity, great balance, fine tannins, just entering its prime drinking window. Good weight and finish. This has the "stuffing" to improve over the next decade. Next time I will decanted this for 5-6 hours instead of barely one.

Grilled steak and rack of lamb provided a perfect backdrop for this pair of 1982 Bordeaux beauties

Deep garnet core with some browning at the edge, clearly appeared older than its flight companion a 1982 Leoville las Cases, which was far deeper color and virtually no sign of age. The nose was filled with soft dark red fruits, earth, tar and smoke. Palate was so smooth and silky, clearly benefiting from both the 82 vintage richness wrapped in pomorol silk. Dark red fruits were a little muted, this was clearly not as well stored as the LLC which was fresher and younger. Good balance and complexity. On its own a very nice glass but suffered vs the night's offerings

Paired with 1982 Latour Pomerol. Youthful dark garnet core with an initial bouquet of cassis, spice and cedar, far more open than the LP. Primary dark fruit, fuller bodied, lovely texture with silky tannins, balanced and a long finish. Like the bottle earlier this year, this LLC is open and ready for business and is superior to the 82 LP in every way.

As always Yquem is the perfect way to sip and linger after an amazing meal.

White - Sweet/Dessert

#2 of a 12 pack. Lighter than the bottle earlier this year. This bottle displayed a beautiful nose of dessert fruits. The palate of apricot along with hints of burnt orange and citrus wrapped with hints of caramel and creme brûlée. Lovely texture and persistent finish.

A great evening .... All of the wines showed well and were wonderfully complemented by the food and hospitality of Carbone.
