Maturing nose with a nice expression and with an intense and nice palate.

Rosé - Sparkling

Youthful nose showing minerals, bakery, red berries and opens up with hazelnuts and some roasted notes. Structured on the palate with cherry stones bitterness on the nice and balanced finish. This is very nice and pleasant from the start, and should develop nicely in the cellar over the coming years.
(Best with 2-6 years extra cellaring)

Lovely nose showing gun powder, ocean and butter in a delicious way, and with extra time it widens up with spring flowers. Very creamy and pleasant palate dominated by yellow fruit, maybe a bit thinner on the mid but with a very nice and balanced finish showing some gentle bitterness in a very pleasant way. This is drinking very well right now and there’s no need to keep. But I’m sure if tucked away for a decade it will show a new chapter.

Intense on the nose showing flint and cigar smoke at first and opening up with lemon grass and tropical fruit. Palate is showing minerals, tropical citrus acidity and with a rounder bitterness on the finish showing some kaffir lime leafs bitterness in a pleasant way. A bit smoother on the finish and with a rounder feeling this should keep well for years.

Youthful nose showing sea buckthorn, minerals and a touch of butter. This need time in the glass to open up some roasted notes. Delicious yellow apples acidity and with a lovely and intense lime bitterness on the finish that lasts forever.

Mature nose showing butter, minerals and a touch of herbs as it opens up also showing butterscotch in a delicious way. Acidic palate with lime citrus and roasted coffee notes, with a lengthy finish showing lime juice acidity in a youthful way. This is very ready on standard bottle and should not be kept much longer. But with extra long time in the glass it opens up very well.

Still showing incipient maturity from the recent disgorgement showing gunpowder, minerals and a fruitiness that is just amazing. Creaminess on the palate with a very intense lime acidity showing a lovely mid before the excellent finish filled with gun powder, chalkiness and cream. This is excellent all through the glass and will keep the same for so many years to come.

Youthful palate with lime zest bitterness, filled on the mid with an intense lime acidity and a lengthy finish where the lime zest bitterness comes back again. This has evolved very well over the last year and is really starting to show now.

Still light yellow colour with a greenish touch and an endless stream of very fine bubbles. Delicious on the nose showing cream, flint, acacia flowers and citrus. With extended time it shows a wonderful development with coffee and roasted hazelnuts. Palate is at its best with a refreshing citrus acidity attacking at first before the creamy mid and with a lengthy grapefruit bitterness on the finish. Always lovely, flint and gun powder on the nose. This is always excellent.

Youthful with incipient maturity showing butter, minerals and opens up with a lovely butterscotch note. Very pleasant. Balanced on the elegant palate showing yellow stone fruit with a smooth mid before the balanced finish showing a lime juicy acidity. Much better compared with last bottle I had this spring, opening up faster than I had expected this is starting to show very well now.

Palate is fresh with strawberries and some lime acidity before the creamy mid and a lengthy finish showing cherry stone bitterness in a fruitful and pleasant way.

Very much sweetness on the palate, but with a well balanced acidity and freshness showing lots of mature black currant. This is very special, but matched the apple tarte very well.
